American Style Dive ideas

What kinds of Americanized foods do you think i should make, if i were to open a dive/diner? Something with low food costs.

The Aussies keep pissing me off with all their horrible interpretations of Americanized foods. Im like can i get some kraut and mustard on that dog... the phucs had neither... so i said chili and cheese.. they pulled out Asian sweet chili and im like wtf..

i had to ask for their watery ass chilli con carne... made with tons of beans and for the cheese - a white bechamel based white cheese sauce with zero flavor.. all served in some big ass bread roll.

As bad as the dog was it beats this American BBQ joint i went to though... im thinking chili cheese fries sound good... you know since its a staple of any good bbq restaurant.. but hey im like f it.. give me an order... the shit arrived at my table covered in taco bells nachos bell grande toppings with that shitty white cheese sauce.. was it good. sure i suppose but was it american chili cheese fries - phuc no...

i need some fucking orange cheddar

Oh the buffalo wings i had the other day werent even completely covered in sauce. the fucks lightly spread it on like ketchup.

Im getting to the point where im going to start wearing a fosters beer t-shirt around every phucing day

Lol Chili was my first thing, but I think you have that idea already.

A really good meatloaf meal with some good potatoes.

Gotta make like 3-4 great burgers.

I wouldn't go crazy trying to do a bunch of BBQ, but you could do a great pulled pork sammich, that isn't too hard.

Also should make a good grilled cheese.

A good sub samich is pretty easy to make too, if you are able to get good rolls there. The bread is the key.
Oh, and maybe some soups too, Broccoli Cheddar, Cream of Chicken rice....

Surprisingly, the hot thing now is tater tots: Plain, chili, queso, cheese and bacon. As an appetizer or as a $1 upgrade to fries

Mac and Cheese is also made a big comeback: Plain, lobster, bacon, crab

Both are cheap and easy to make with a large profit

Not exactly. ive been in support roles while i was pursuing a culinary career many moons ago....worked/also eventually ran a line, prep, saucier, steam, fry, soups, salads, bus boy, dishwasher, some grill etc etc... did the culinary school thang back in the day... plus the early years of fast food in hs. If i have a weakness, its pastries and desserts.. i can make some decent homemade pies and a few cakes - i just cant decorate worth shit

Plus, im the cook at home. no offense to the wife but ehhhhhh... ill just keep it at that.. she can bake cupcakes though

Even though i havent been in a commercial kitchen in over a decade, i still have an itch from time to time. I keep thinking about running some sort of americanized dive in aus, just because they cant get the foods right.

I just dont want to heavily invest into anything atm. BBQ sucks here, but that will definitely take a firm financial investment - the wife isnt on board for anything like that.

Food trucks arent as easy to operate here as in the USA..

I thought about starting off small at this lil local yuppie outdoor market they have once a week. Just using a grill and some hotplates. However, this limits what i can cook though. It needs to be fairly quick too.

Our aussie friends love my cheeseburgers but they take about 10-12 minutes (half lbs) i could cut the time by going 1/4 lbs and turning up that heat i suppose. The burgers suck here for the most part. you got you bs fastfood and all your local takeaway shops that basically used those processed frozen patties. I had to go to a sit down restaurant to actually get a decent burger and it still wasnt that good.

I thought about doing modified philly cheese steaks using brisket.. since i could precook the brisket at home and then refire on the grill real quick. Them aussies love when i make that too. maybe even some quick melts on some really good bread. tex mex...

If i had an actual store.. Perhaps southern comfort style cuisine (with a monthly sunday bbq day eventually) and featuring some no frills southern style pies and cakes.. ive yet to see a pumpkin, sweet potato or pecan here. They like their apple pies but its still your more traditional cinnamon/sugar here.... i havent seen a brown sugar/buttered one yet...

Id also like to do a wing shop here.. since they really suck at this overall... im sure theres a place i havent been to thats decent..

If i can figure something out for the market, i may just bring some cakes/pies with me to start feeling out the market.

they eat hotdogs here... but its more of a niche market and bigger in the inner cities.. no chicago dogs... mcdonalds actually came out with a range of dogs last year.. that feature different regions of murica, including chicago... they were horrible interpretations

aussies seem to prefer sausages if they are eating a tube of meat though.. they arent bad if you source them from a butcher, the grocery chains sausages are pretty shitty

what i do have going for me though, is that im an immigrant.. with immigrant food.. so my cuisine will definitely differ. a real american cooking Americanized foods.. hell even that last american bbq joint i went too was owned and operated by an aussie.. they served the worst brisket i ever had in my life.

i mean i could even do chinese/american... while the aussie/chinese is decent and there are the authentic places around.. youre not getting any orange chicken, beef and broccoli or general tso here.

no deep dish pizza anywhere in sight... perhaps hidden in the city, but i wouldnt know... i dont venture into sydneys cbd often..

theres just a lot of opportunity for an American immigrant doing Americanized foods... but im sure a lot of it would be hit or miss... the aussie palate would ultimately decide your fate.. but another thing.. you could be like wtf do you know.. im murican and this is how its suppose to taste
