So my family farm is finally branching into a little processing operation in the next year and one of the things we will be doing with our 100 percent grassfed, completely naturally pasture raised cattle is making beef jerky. Anybody experiment with recipes? I'm working on a sweet sriracha like recipe with my own fermented pepper sauces, a southwestern adobo marinade, and the obvious teriyaki, but that one will require me to start brewing my own soy sauce because my wife opposes gmo's and wants to keep everything "farm to mouth"

Anyways, share recipes please!

I don't have any recipe's, just a story and a question. Every year I buy this beef jerky from a vendor where they have fireworks for the 4th of July where I live. I forget what the hell they call it, has something to do with Jack Daniels. Best jerky I've had, by far.

Anyways, my question to you is, what cut of meat are you gonna be using? The people I buy from use thinly sliced ribeye, maybe that's why I like it so much.

Ribeye is epic fail. You must use the leanest cuts because fat goes rancid very quickly. Those guys are fucktards. I hope you don't hold on to that jerky because it will spoil and cause rotbox. Kinda defeats the preservation intentions. If it is shelf stable, I'm sure they are using chemical preservaitives. I'm sure it's taste because fat is flavor, but they are doing it wrong.

We will use butt roast, flat iron steak and lean sirloin.

Also, we will harvest deer for this as well, maybe board if they come back....

All good to know, it never last long enough for it to spoil around me. Thanks for the meat lesson

Are you going to sell it anywhere besides locally? Like, maybe, to people on this forum? It sounds awesome, I would definitely buy some

thanks! We will be shipping. It will be pricier than maybe some would like, but it's a small farm with super high standards, and the quality should be unparalleled.

I pay $10 a gallon for raw milk so price isn't a huge issue. Unless it's like $75 a pound...
