The first time I ever went to get barbecue in Texas was at an African American owned place in Texas. I didn't see rib tips on the board. Being a Chicagoan, I figured this was an omission. I asked "Got any rib tips?" And the women immediately said "you from Chicago?" Never saw them in Texas, probably 50 different bbq restaurants visited, or anywhere else outside of Chicago/StL and environs.

The best I ever had were Lem's but that was probably 20 years ago. Never been to Honey One or Uncle John's.

Honestly best tips I've had were ones I made with the sous vide bath, hardwood grilled them sauced in a crockpot for an hour. Tender. Smokey. Bark and saucey.

Had them at Arthur Bryant's. Not sauced but they had sauce bottles on the table. Looking online it seems in Chicago they slather sauce when the order goes out.

No offense to anyone's tastes, but after leaving Chicago I realized that Chicago is NOT the place for ribs..Memphis is awesome (Corkys, or Tops),as is Detroit (Red, White, and Blues), and there is a place in Asheville called 12 Bones that has the best ribs ever...Obama used to invent reasons to come to Asheville just to eat their ribs

They also have an awesome smoked Turkey/Brie sandwich....

And the daddy of em all, "The Hogzilla"..It combines 2 strips of bacon, a sausage sliced lengthwise, pulled pork, on a hoagie..I can honestly say, I have never had better BBQ..

If youre so inclined, they have a habenero/pineapple sauce thats one of many they offer.

https://www.12bones.com/

There was one place in Chicago ,however, that had great rib tips.."Guys BBQ" at 36th and Giles, but Guy died and the place closed

Lems at 59th and State was pretty good.I dont know if theyre still there though

Mister T had a BBQ pit on 35th street around Prairie..He had decent BBQ

BTW...No place outside of Chicago that I have visited offers Rib Tips, except "Daves" in Knoxville.. But thats a chain thats pretty much all over the country

Sorry for the ignorant question, but why get rib tips when you can have a slab?

Rib tips come from spareribs. Once separated the meaty more uniform part is called St Louis stye ribs. The other part are the rib tips. I imagine they became popular because they were less expensive.

I will warn you, I had rib tips one time and if you get bad ones they can be really awful.

Of course I got them as part of a combo plate at Famous Daves.... das my fault.

Agree... my pops was out my way and wanted to go there.

There is a place called City BBQ in Orland Park now.... they do it right, that's where I would take him for BBQ next time, assuming I'm not smoking meat.

The reason i Started this thread is only because i love that hillarys sauce. The service is crappy. The rib tips sometimes dont have meat on them , it's that vinegar infused sauce. Just love it .

Went there one time. They explained the hot sauces including Devil's Spit, their hottest. I got a chicken sandwich as I still had to work later that day and didn't want to get sauce all over me.

I took a pinky taste first. Then I doused my chicken sandwich in it. The waitress comes by and asks me how things are and I said "Let me know when you want me to train your cooks on how to make a hot sauce." She apologized and offered me Tabascco sauce. Come on, seriously? You call one of your homemade sauces Devil's Spit and Tabasco is hotter? Yeah, skip Famous Dave's.

My dad loves Famous Dave's for whatever reason. Back when I was a young child my dad went and got rib tips from there. My mom hated them and we never got rib tips from Famous Dave's again lol.

That location closed down not too long after and I've had Famous Dave's once since. I remember it being only ok.
