This thing has to be made by Lucifer himself. I cannot get it right. First attempt was zucchini bread. Got a recipe that worked perfect as far a the bread rising and the texture. Smelled fanfreakintastic. Bit my first piece, and it tasted like poison. I concluded there was too much baking soda or backing powder or both.

All other attempts have failed to rise properly. I'm guessing my active dry yeast is to blame. I may need to let it sit longer in water before starting the bread.

Any body got any advice on these things or recipes?

I never used a bread machine.

But the best advise to anyone working with glutens, is rest fixes most texture issues. I also don't use baking soda, as it will neutralize some of the acids that you need to create porous bread(from the yeast). I could be wrong on that assumption, but baking soda is something I avoid with dough, but use sparingly with batter. Batters are runny, doughs are firm(obviously, but just putting that out there if the bread machine wants more of a batter.) Regular table salt will do what baking soda will do for normal bread. A little goes a long way.

Yeast likes two things. Moisture and sugar. Warm air is best for moisture. If you pull yeast out of the fridge, it's cold. So you need to give it some more time to activate, rise, and rest.

I just didn't measure the soda and powder and I'm pretty sure I put too much. From what I read, that's probably what cause the bad taste. As soon as I get another zucchini from the garden I'm going to try it again.

I do make a mean unleavened bread. Don't need a bread machine fo dat.

Looks legit man. Get a serrated knife like Crys said and you'll have the best looking (and likely best tasting) homemade bread in your general area...probably.

I'll post recipes if any one wants. Now that I found a manual for this contraption I know what I'm doing. I bought the bread machine for $4 from a yard sale. Found the manual online and boom, bread. Got my eye on a beer bread to make at some point.
