It's too easy to make bread. Sourdough starter, make some sourdough. Or Use the starter to make Rye. Peasant bread is also fantastic.
And this seems to be a long debate among some about whether they consist of being 'bread', IDGAF, but hoe cakes / johnny cakes (whatever the hell people call them, we grew up calling it mush cake) are awesome. Bake a cookie sheet with a handful, use them as your hot dog buns. It's like a corndog, but not fried.

Racine Bakery pumpernickel is one of my all-time favorites. They pretty much have made it the same way for 35+ years.
If you're a Chicagoan and don't know Racine Bakery, then get out from under a rock. IMO the minimum standard a bakery needs to be, and prices are always great. You can even compare an $8 2lb Rye from some hipster bakery to the $4 2lb loaf from Racine and be very surprised.
And I love Trader Joes multigrain oat bread for a simple tomato and mayo grilled cheese.
