My chili differs.. sometimes beans, sometimes none. Sometimes mince, sometimes, chuck, brisket etc. but the base is pretty similar. might change that up too, depending what i have around...
guajillo (dried)
pasilla (dried)
ancho (dried)
red jalapeno (fresh n roasted will use green)
chipotle (can)
diced green chiles (can)
beef stock/broth (homemade)
cumin
coriander
smoked paprika
salt
pepper
onion
garlic
tomato paste
diced tomatoes (fresh n ripe)
bacon for the grease or will sub in duck fat. ( but will leave bacon bits in the chili if using bacon)
liquor
i rehydrate the dried chili in broth then blend with 1-2 jalapeno and 1-2 chipotle. if i can get any pepper fresh, will roast it... if im drinking i might also throw a shot in the stock/broth when rehydrating.. im generally drinking when making chili. i will dice n mix the green chiles with the diced tomatoes and add later.
i like to saute the majority of onion and garlic... get it caramelized.. add garlic late as not to burn.....if using whole meats add around the same time as garlic, along with spices... im really bringing the sweetness out of the onions..... will add a small amount of raw garlic/onion to the pot right before liquids too... if i use mince its a little different.. i keep cooking it down with stock/broth.. maybe 20-30 minutes of that liquid sizzling cycle..... think making risotto or better yet..a real bolognese sauce..
add tomato paste.. a shot of liquor that youre drinking and a shot of stock to loosen that paste up and give it a few minutes of love.... add diced green chiles, tomatoes, left over onion, garlic --- a few seconds to a minute of love... then pour in blended chili and some good beef stock/broth.. let its magic slowly happen for hours..
can add some starch to thicken if you like it thicker before adding the liquids... masa, corn flour etc... slurry it up if required at the end... i like eating with crackers, tortilla chips or cornbread so thinner is okay for me. that shit will soak it up....
edit: shot of liquor isnt a standard sized shot.. just a lil bit.. or more depending on the size being made
