Got a grass fed brisket out of the deep freeze. Brining my own this year with the pink salt and looking forward to braising in guiness next week. It's big so IM gonna make pastrami with half. Anybody Irish on here got some authentic tips to round out my paddy day feasting?

My grandmother's parents were Irish immigrants...so there is a couple of things my grandmother would tell you.

Corned Beef is not a traditional Irish dish...it's more of a Jewish thing. The Irish immigrants in New York City loved the value of it...so it became a staple among the Irish-Americans. If you want traditional...lamb stew is the way to go. Maybe even a nice Shepherds Pie.

She'd also tell you not to touch any alcohol because she was a devout Irish Catholic girl and it is still Lent.

All that aside...as a fan of corned beef...you sound like you are doing it up right.

J/k - I didn't know that about the Jewish connection but definitely see how beef would be more American than lamb. I don't think braising this beef in guiness is very traditional either but I did it last year and it was tasty.

As for the Lenten boozing, I was in forest park yesterday for the parade and I'm pretty sure there were more than just Irish protestants there LOL.

Jews actually invented CB. I don't know how it got attached to the Irish, but NY Jews that were poor immigrants learned how to take a bad piece of meat and make it edible by marinating it in those spices..I learned that many years ago in Chicago. I love making CB hash the day after with the leftovers.

Corning has been a way to cure meat for anyone with access to salt for ages. Brisket was traditionally a throw away because of it's toughness but is by no means a bad piece of meat. It has exceptional marbling and is a unique cut.

The brisket is now a premium cut if you want pasture grassfed beef, simply because of supply. When we slaughter an animal, the brisket is the first to go because there is only so much. It's claimed just like heart or liver. IM going to brine a heart from the next batch of cattle. Probably pressure cook it for reubens...

It's really not that big at all, I'm building a big commercial one in a barn on my compound homestead though - can't wait. Its has a smoke house, dry age room, and a big ass woodfired bread/pizza oven. Hopefully finished by next Summer, pretty excited.

Alright, brisket took well to the brine. Now its braising in water under a bed of lemon and onion slices with a few cloves, peppercorns and a dusting of allspice. In 4 hours the braising liquid gets dumped and i glaze it with a dijon/brown sugar mixture under the broiler for a couple minutes. Serving with grilled cabbage wedges and new potatoes in herb butter. Happy paddy day weekend all!

Then you would proabably be dissapointed at a lot of high end restaurants serving cuts like short ribs, flat iron steak, lamb shanks, beef heart, flank steak, goat meat, etc. its all about the preparation.

The loin cuts of any animal are the most tender but lack the flavor that is imparted by bone, connective tissue and fat. i rarely eat beef tenderloin when i go out, its just too easy to cook.

As was said earlier, Corned Beef and Cabbage isn't really an Irish dish.

No shit but it is nowadays in the usa. And it was delicious.

Corned beef is as about an irish dish as.the cubs are a baseball team.

I wouldn't be dissapointed at all...Just as I'm not dissapointed in corned beef if prepared properly. I love it. I ate some today! But it is what it is.

It's a dish invented by Jews cause they were poor immigrants who learned how to tenderize a bad piece of meat. It has nothing to do with the Irish, which is what I originally posted...Whats the argument??
