Here's a good breakfast:

Dry up bacon in a cast iron skillet.

Meanwhile, grate potato and immerse in ice cold water (it saps the starch, making for crisp browns after strained)

Grate onion, mix with potato. Take bacon out oftthe pan and dice, our potato/onion into theskilet and let it go until lightly browned, then flip the whole thing. Throw down some shredded cheddar, minced jalapenos, bacon, whatever on half while other side gets nice and crispy. Fold that shit over like an ommy and top with a poached or Sunnyside up egg. Boom.

I make this, but usually too lazy witht he shredder so I buy the potatoes at the store pre-shredded. Works great.

You can bake the potato to get the moisture out. Easier then grating and squeezing the **** out of it to get desired crispiness.

HHM hates beans as much as Ares hates pigeons

I love beans. I wat a bean meal once a week. Red beans and rice, hoppin John, Pintos and kielbasa, falafel, black bean cakes, navy bean soup, etc. just don't put them in chili because I wasn't raised that way. I will start an awesome bean based recipe thread if you guys want...

Easier, yes. Time consuming, yes. My method takes ten minutes while u do everything else. Baking takes 40 min in convection oven...

Actually, I baked some potatoes tonight just to see how it pans out. I think parbaked will actually be superior to my method, giving that the shreds will be now dry. I normally don't think I'm cooking breakfast before I start cooking breakfast in the morning, but I look forward to the results.

Yea, its why they do it. It doesnt take much effort just to bake a potato or two off and stick it in the fridge. It takes out moisture you probably wouldnt get out. The dryer the potato the crispier it gets. Like frying a french fry. You can tell that fries are almost done and crispy when all the steam from the moisture goes almost completely away.
