Just made my first version of the sauce. Really enjoy it on a lot of things. Had it with "Green" eggs and breakfast potatoes this morning.

18 OZ catsup
6 OZ water
3 OZ apple cider vinegar
3 OZ white vinegar
4.5 tablespoons brown sugar
3 tablespoons worcestershire
1 tablespoon chili powder
.5 tablespoon kosher salt
.25 teaspoon pepper
.25 teaspoon cumin
.25 teaspoon garlic powder

Mix together and lightly simmer while stirring occasionally for 30 min.

Anybody have some other good ones? How about some good vinegar ones without a lot of heat?

The one I make consists of:
Peeled tomatoes, fresh garlic, red bell, serrano, honey, orange zest, salt, white vinegar and black pepper all in a blender. Then I handmix some grated ginger and cinnamon with finely chopped onions for texture. A dash of liquid smoke and mix in melted butter to consistency. The water from the fresh tomatoes is sometimes not enough, so you might have to add a little bit. But it's not all that hot, the vinegar neutralizes a lot of the heat.

It's a working recipe, so every year I adjust it(fun part about cooking). Therefore no precise measurements.

I boil some apple cider vinegar and throw in a fuckton of brown sugar. then I add some chili flakes and ground mustard seed, scoop in a bunch of tomato paste, stir in some liquid smoke and yellow mustard, molasses to sweeten more, a little liquid smoke, hot sauce if I want more heat. thin it with vinegar if you want it thinner, but be sure to sweeten it, if you like it thicker then add more tomato paste. This is typically a pork protocol but if I'm doing chicken I throw in honey and chipotle peppers, for beef more liquid smoke and some worchestshire sauce, maybe even beef broth. I think the less ingredients the better because like Chrys said, it's a working recipe. And most of the flavor should come from the smoke and rub IMO...

Here's my homemade sauce. It's about as basic as you can get. If you need to cut into the heat you can add a pre-made Open Pit/Sweet Baby Ray type to it, but I like the spiciness. Definitely not for those that think Jalepeno/Serrano kills all taste of the food type people.

Once I got a recipe from a magazine for ribs and sauce..By the time I bought the slab of ribs and the ingredients for the sauce, I had $28.00 tied up and all the time to make em. At that time I could buy almost 2 slabs at 12 bones for that, and never have to lift a finger.Except to eat em..lol

That sounds fairly similar to one I used to make in terms of ingredients (probably slightly different proportions though). I had it written down and kept refining it over time...but I lost it.
