We have a Mexican Pancake house here. It was called the "Mexican Pancake House" for a long time, then changed names a few time, but it's the same few people working in the kitchen.

Good breakfast place, and they make an awesome breakfast burrito. For $4.50 you get coffee, a short stack of 2 thick pancakes, 2 eggs, hash browns, and whatever breakfast meat. Breakfast for 2, under $10. Which are prices you might find 5+ years ago, not so much now. Even Denny's is $7 for the same meal.
