Anyone else dig a good pecan pie? I fucking love pecan pie. We had some pecans laying around that didn't get used in something else so I decided to make use of them.
I used a good pre-made crust this time but crusts are pretty easy to make.
1 cup maple syrup. The real shit, not some cheap garbage
2 tablespoons butter
1/2 cup of brown sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
3 eggs
2 cups pecan pieces. I use a tad more because I like pecans
Put maple syrup and cold butter in a small saucepan. Heat on low-ish heat until butter is melted
Whisk together eggs, brown sugar, vanilla, & salt
Combine maple syrup mix and egg mix in a bowl and whisk further
There are a couple of ways to do the next step
-add pecans to bowl of mixture and stir together really well. Pour this into the crust as one
-pour pecans directly into crust and even them out. Pour mixture on top and wait until everything settles. I did it this way this time, the pecans get a little crunchier.
Bake at 375 for 30-40 minutes. I checked at 30 minutes and it needed 5 more. It's done when only the center is a bit jiggly. Remove and let cool before eating
I already had a piece and can't wait to have another with lunch. I'm the only one in the house that eats pecan pie so I'm gonna be hammering this entire thing down my gullet in the next few days, it's shameful...
