Pecan pie

Anyone else dig a good pecan pie? I fucking love pecan pie. We had some pecans laying around that didn't get used in something else so I decided to make use of them.

I used a good pre-made crust this time but crusts are pretty easy to make.

1 cup maple syrup. The real shit, not some cheap garbage
2 tablespoons butter
1/2 cup of brown sugar
1/2 teaspoon salt
1 teaspoon vanilla extract
3 eggs
2 cups pecan pieces. I use a tad more because I like pecans

Put maple syrup and cold butter in a small saucepan. Heat on low-ish heat until butter is melted
Whisk together eggs, brown sugar, vanilla, & salt
Combine maple syrup mix and egg mix in a bowl and whisk further

There are a couple of ways to do the next step
-add pecans to bowl of mixture and stir together really well. Pour this into the crust as one
-pour pecans directly into crust and even them out. Pour mixture on top and wait until everything settles. I did it this way this time, the pecans get a little crunchier.

Bake at 375 for 30-40 minutes. I checked at 30 minutes and it needed 5 more. It's done when only the center is a bit jiggly. Remove and let cool before eating

I already had a piece and can't wait to have another with lunch. I'm the only one in the house that eats pecan pie so I'm gonna be hammering this entire thing down my gullet in the next few days, it's shameful...

Pecan pie is a favorite of mine as well.... one of those Amish groups setup a stand in my building lobby last year and they had Pecan pies.... I bought one, brought it home in my backpack, and ate the entire thing over the course of 3 days.

No problem. I just polished off my second piece. Gonna have to hit the gym a little longer this week.

I haven't had a decent piece of pecan pie since my grandmother passed away a few years ago. This recipe I just found is pretty close to hers, which I'm sure was just the Karo syrup recipe. The only thing about pecan pie is the cost to make it. Pecans are pretty expensive and the eggs I buy aren't cheap(farm fresh, ftw) so this would probably be a $30 pie at a restaurant. So good though...

Three days to eat a pecan pie? This is why I can't eat it anymore. Usually gone the same evening. :(

I swear my mom makes the best pecan pie....damn pecans are so expensive though.

sofa king good stuff. Too bad I may never have one again, because I gave up on sweets. But I love me some pecan pie, or even pecan rolls, and peacan nut cups. MMmmMMm

Nah, it's all good. No agave either. It's not a diabetic thing(not diabetic at all).

My mom makes these walnut cups every year, pretty much the same as pecan pie, but with walnuts so they are a little more bitter. I'll cheat when she does that since they're roughly the width of a half-dollar.

IIRC, she makes a crust with egg, flour, powdered sugar, butter, and cream cheese. Exactly portions, IDK, but that's a damn good crust too. It would work just as well for a pie. You could take your recipe to a whole new level :)

I really don't know anymore. I was dead accurate before with my work. I'm hyperactive, therefore sweets are not my friend. I still get my fructose from, well, fruits. I would read an entire book a day, do a week long project in a day, do a weeks worth of work, and because of my level of energy and efficiency, I also over-committed myself. Eliminating sweets hasn't quite fixed my hyperactivity, but I'm no longer talking like John Moschitta for hours at a time and I now have a semi-regular sleep schedule. Plus I feel a lot better, so something must be working. Sweeteners are addicting, so if I'm able to be content with where I'm at now, I don't want to turn this into some kind of yo-yo.

Interesting..... and yes.... they are addicting.... hence fat ass Murica lol
