Side Dish: Corn Medely

I am wanting to make this as a side dish, but would appreciate any help from our chefs.

Buttered Corn Kernels
Finely Diced Onion
Chopped Bacon
Cranberries

I would cook the bacon, saute the onions and cranberries in the bacon grease and mix it all together with the canned corn that was heated and buttered.

Some are telling me the berries might make the dish bitter. I am not sure. I have it with green beans, almond slivers and butter and it is good.

thoughts?

You shouldn't butter your Con Kernels.

You can always add some sugar if the cranberry is to bitter but the sweetness of the corn and the bacon should mask any bitterness.

How about a simple, kick ass creamed corn recipe from our resident Chef, Silence? Haven't had good creamed corn since my Mother passed.

How about a simple, kick ass creamed corn recipe from our resident Chef, Silence? Haven't had good creamed corn since my Mother passed.

I have an amazing creamed corn recipe. One of my favorite dishes.

Sorry it took so long for me to get back to you. I'm not at home so I can't check exact measurements so you might have to improvise a bit.

Sauté bacon rashers, add minced onion and garlic and stir with a fork until translucent, set asside. Roast whole ears of corn in the oven, basting with mayo until nice and caremilized. Strip the kernels from the husks and add into the pan and stir in a couple fistfuls of candy corn and some parm cheese until gooey and delish, then throw the whole pan into the oven to get a nice candy cheese crust on top. Finish with a sprinkling of cinnamon and crushed peppermint candies. Serve hot.

That recipe was developed in our cooking club test kitchen by HHM, grimson, and myself. Teenbar taste tested for us and he thinks it's most excellent.

Make sure when you stir with the fork you press really hard on the pan and go side to side really fast on the pans bottom. Thats what the pro's do. Wont hurt your pan a bit! :yep:

People buy canned vegetables?

Heck ya. First off fresh corn is rarely available and frozen veggies taste nasty.

I like corn either way, sometimes on the cob other times kernels from the can. String beans I eat raw fresh, cooked canned.

1 can corn with the liquid
1 can creamed corn
1 cup macaroni
8 Oz velveeta
Butter (maybe 1/2 stick, don't recall)

Put all in a small crock pot or bake in a casserole until macaroni is done. Shits good.
