I like to top the pepper like a pumpkin clean out the guts then take and dice some jalepenos and cube up some pepperjack cheese cut up into tiny chunks some new York strips. chop up and dice a tomato, brown some hamburger meat. throw all of this with some Italian seasoning and salt and pepper inside yer bell pepper then throw the top back on have. yer oven set to 450 let that baby cook for 25 mins take it outta the oven and enjoy heaven for the ole tastebuds my friends. its good times

generally for my side with this ill take red potatoes chop them into cubes throw them in a pan with 2 sticks of butter season them with Cheyenne peppers and some franks redhot and a lot of garlic powder. throw one cup of water in the pan cover with tin foil then bake those badboys for 35 mins on 400 and you got a nice spicy side to go with yer stuffed peppers.

grilled asparagus pretty simple really ittalion seasoning stick of butter salt and pepper and glaze that shit while u grill them with said mixture until u get those babys to the desired softness u preffer I tend to like my veggies a little more crisp than most but that's one of my fav things to cook

I'm not a big bell pepper fan (as a primary ingredient at least), but I've got a decent one:

3-4 bells (remove top and interior)
1 package of either Spanish rice or other semi-spicy rice mix.
1 large onion (minced)
2 cloves garlic (minced)
1 lb ground beef
1 tsp cumin
1 tsp cayenne
2 tsp paprika
1/4 cup bread crumbs
marinara (optional, but endorsed)
pinch of salt and black pepper
olive oil (not extra virgin as it burns at too low a temp)

Roast the peppers in the oven (350 for about 8 minutes or until slightly soft) while preparing rice. Brown beef and spices while sautéing the onion (always salt and pepper both meat and veggies) add garlic to onion once the latter becomes translucent (garlic burns much faster than most other veggies). Stuff peppers with beef/rice/onion mixture (and sauce if you so desire), then cap with breadcrumbs. Return to oven until breadcrumbs brown. Done.
