Stuffed Peppers

I am planning to make some stuffed peppers in my crock pot this weekend.

Pretty safe recipe.... ground beef, rice, can of tomato/garlic, some ketchup and worchestershire sauce.... let it slow cook for like 6-8 hours.

Anyone got tips, tricks, great recipes?

If you want to go low carb, replace the rice with cauliflower that you did up in your food processor.

You don't need the food processor really if you plan on using the crock pot. Just chop and go.

But yeah, replacing rice with cauliflower. That's a great suggestion, even has better flavor.

Anyone have other filling suggestions? Spices/herbs to season it with?

I was considering trying some Marinara/Vodka sauce in with the tomatoes in the filling mix.

That's up to your preference. Little bit of fresh cilantro might be a nice addition. Maybe some sauteed mushrooms? Lots of ways to do a stuffed pepper/cabbage/dumpling/roll etc. Keep it simple, go crazy? Family secrets still sealed in grandmas notebook, maybe ask there ;)

Cilantro would be a great flavor add.

I've found with stuffed peppers (and stuffed tomatoes is something I've made int he past - same concept) keep it simple. The star of the dish is the meat and rice. You don't want to drown that out.

I'd personally avoid the ketchup, especially if you're already doing tomato sauce, and maybe add just little balsamic or some other acid for a little zing.

No on that front.... and I am serious.... my family on both sides... both Grandmas cook like they are still living the great depression.

My maternal Grams used to berate my grandfather for using salt/pepper on his food, she seasoned nothing she cooked.

My paternal Grams is notoriously even worse when it comes to cooking, many a story at dinner about the horrible shit she would cook for my Dad and Uncles/Aunts.

I once asked my Uncle on my Dad's side "What was the best thing she ever made for dinner" and his reply was "I think she ordered pizza once, it was amazing"

And that led to my mom and dad who also barely cook.... my mom can make like 3-5 dishes that are solid, my Dad can make breakfast and order pizza.

I come from a culinary challenged family lol

I was considering adding some marinara sauce instead of ketchup actually...

Crys is 100% though, if you can get your hand on some fresh cilantro your won't (or shouldn't) be disappointed.

You can also buy it pre shredded I know Trader Joes has it, but not sure what stores you have up there. Maybe wally world

I would dice a few jalapenos up in there if you wanted some spice. either that or add some Sriracha to the ketchup.

Some kind of grated cheese over the top right? I've always seen Parm or something, is that goofy? Bread crumbs mixed with cheese for a crunchy top, stuffed peppers always seemed like a bunch of single serving casseroles to me. And by single serving of course I mean that I would always eat two.

never tried them in the crock pot... i guess just check on them to make sure they dont get too soft and fall apart when you try to take them out.


beef mince (or sliced Italian sausages or remove from casing mince in some versions).. i go rice, tomato sauce, garlic, some dry basil and parsley (u could add oregano too), S&P (im a sea salt guy and i ground me peppa) a lil olive oil....... then dress with fresh basil and olive oil before serving

i use lamb forequarters a lot, cause i like lamb, if you dont, dont make it...

quick very high heat sear (still raw inside).. rest.. dice up.
wild rice/white rice
S&P
dry rosemary
a lil tomato sauce to coat mixture
a lil olive oil..

dress with some lemon juice, olive oil, a lil fresh rosemary.
