In X-men Origins Wolverine, William Stryker is the one that is in charge of injecting Logan with adamantium. Which he tells his people to proceed with the injection.

In the movie “Logan” Zander Rice and Logan speak. This is what is said.

“Zander Rice- I believe you knew my father in the weapon x program.

Logan- Yeah. he's the a****** who put this poison in me.”

That poison is the adamantium. Zander’s father “Dale Rice” is the one according to the movie Logan.

So which one is it that injected Logan with adamantium, Dale Rice or William Stryker?

The Professor (not Xavier, Truett Hudson) bonded wolverine's skeleton with adamantium. I have that comic in a box one room away from me and I'm 100% sure of that fact.

IDK WTF the movies did. They fucked a far far superior story up from the original Weapon X arc and most of it is pretty much inconsistent. They don't have full rights to all stories and all source materials, thus why you get some watered down crap that insults the very fans that kept Marvel alive.

Wolverine sucks, talk about a Napoleon complex. He's the the Bobba Fett of the Marvel Universe, totally overrated in every possible way.

Now that Disney bought out fox I believe they own the rights to X-men and fantastic four. I’m sure they aren’t going to just sit on that and will develop new movies. They have done an awesome job with marvel so far can’t wait to see what their vision of X-men will be

Stryker is the military dude that oversaw Weapon X. Rice is the actual doctor that ran the program. So possible Stryker gave the order that was carried out by Rice and his team.

The other thing to bear in mind is DOFP altered the timeline so events didn't play out the same afterwards. So possible that in the new timeline that Logan takes place in, Rice was the one that gave the order to inject him.

Issue is timing. Stryker as a character debuted in 82 and had always been associated with Weapon X and was a frequent enemy of the X-men.

The Professor was new having debuted in 91 and was a lesser known character. So most likely as they were developing the X-men movie they went with the character with a longer and more prominent history.

The comics retcon and change stuff all the time so the continuity is a mess.
