Well they weren't a total failure. I left them in way too long and they're overcooked. I can salvage them into lunch meat so it's not a total loss. I even checked them early with the temp probe and the temp was really high. While I was carving them up I got some pieces that had some pink in them still so I had some pretty tender chunks. Just gonna have to have a better plan next time
