Lots of great suggestions here, The Allman Brothers have a few, My fave from them is Statesboro Blues.
B.B. King "Thrill is gone" in my opinion is a MUST have for any Blues collection.
Also Buddy Guy and Junior Wells arguably ruled in the Chicago Blues scene back in the 80's, so much so the Stones would show up at some of their gigs in Chicago bars and jam with them, Mick loves the Blues.
Stones "Little Red Rooster" is one and "Midnight Rambler"
