I guess it depends on what you are cooking in the skillet.... lol if I cook meat or anything where I just leave butter/grease in the skillet I generally don't wash it right away I will leave it greased with the cooking residue.

Maybe I will do what Jester says.... give dat bish a wipe down only and keep cooking. I am no fan of cleaning, I just did soap/water/sponge cause of habit.

Question on cast iron.

Had one once to use on my grill. Horrible to clean and to dry. I want to try again but don;t want to throw another pan in the trash. Advice?

Clean it with soap and water ONCE then season it. The first seasoning I've done in the past is this.

Heat oven to 400 degrees and wrap bottom rack with aluminum foil
Coat pan on all surfaces, in and out, with oil (I use olive oil, veggie oil is OK too)
Wipe excess oil off. It should be shiny but not have any pools of oil anywhere
Place pan upside down in oven and bake for at least 45 minutes
Turn oven off but leave the door shut.
Let the oven and pan cool naturally to room temp
You now have a perfectly seasoned pan
From now on, DO NOT wash with soap. Only water and a plastic bristled brush
For a few months you'll need to partially season it after each use
After its cooled off a bit (cooled enough to handle) wash it out with hot water and your brush
Place back on a med/hot burner until it smokes slightly
Wipe the inside with oil and heat a little longer
Turn burner off and let it cool

You may need to do the outside every so often especially if you use it over pretty high heat. Same procedure as the partial season

I've had my pan for almost 3 years and haven't partially seasoned it in at least 6 months. The more you cook with it, the more non-stick it gets and it's not as disgusting as a Teflon pan

My favorite use of my cast iron (when weather doesn't permit me to use the grill):

http://www.foodnetwork.com/recipes/alton-brown/pan-seared-rib-eye-recipe.html

This and on the grill are the only way we cook steaks. Especially filets. Oh god, filets...

I was with you til that last line. Now I think you're off your rocker.

Jester is right. There is a little more up front work to do but after a bit you don't need to do anything but scrub it out with hot water and a brush. Another way to get it seasoned really well is to cook bacon in it. Big props to my grandfather for that

Mine lives on the stove top along with my cast iron griddle. Those are about the only two pans I need

I don't know if I agree with a cast iron pan being for advanced users. I'm not a very skilled cook but what I can cook, I like to do it well. I will definitely say it's for a committed user. A bit of up front work like I said above and it's pretty heavy. My girlfriend only grudgingly uses ours because it's pretty heavy

Fly removal? Yeah probably not lol.... I am guessing brett was more so inferring if I had a wife I would have been motivated to deal with the issue by now

The only way to clean a cast iron skillet is to scrape it as clean as possible, and oil it a bit..Never wash em

I wash mine with soap and water, then put it on a burner for 5 minutes or so to properly dry it. No oil. But that's just me and I won't be getting into a pissing contest over it.

Have a nice day :)

Its your pot...do what ya want...lol

Srs..All I ever do is scrape it out once it cools..If there is stuck food after that I heat some oil in the pan, and wipe it clean with paper towel...The only time my skillet has ever seen water was right before I seasoned it when I first bought it

Lol I know man I was kidding cause there are several competing ways of handling skillets in the thread.

I am very paranoid about the skillet getting rusted.... I try not to wash it.... I am going to start wiping mine out with paper towels, I think using soap/water is just a habit I've picked up for all normal dishes so I didn't think twice about cleaning the skillet like anything else.

If you get a bunch of stuck on bits, put a small amount of water and a fair amount of salt in the pan and scrub the pan with a paper towel or something. The same and water make a gently abrasive paste that takes most stuff off. Then rinse and dry and lightly oil if it needs it.
