We start early out here in the western chi villages. Forest park paddy parade today. So I brined some brisket all week. Google ruhlman for the recipe 4 dat shit.

Now I'm letting it rest in cold water to leach out some of the salt.

Imma bake it this year, with a Dijon/orange marmalade glaze.

Cabbage will be braised, quartered in some homemade chicken stock.

Thinking about the potatoes still... New potatoes in parsley butter? Pan fried fingerlings? Garlic and crispy Shallot? Or mashed with a guinness/beef broth gravy? I don't know. I may have to consult a leprechaun.

TBH - it's him being lazy, he is a good cook, but his mum is an amazing cook, thing is we aren't celebrating over here until a week Monday. :( And I can't drink :( I will make some money selling hats though :)

Im Irish and I hate Cabbage! lol I cant stand the smell of it being cooked. If I was you, I would go with a nice garlic, scallion mash. Something that will stand up to the meat with flavor. Also, if you have plenty of leftovers thats when you turn around and make a bad ass Shepherds pie! I fucking love Shepherds Pie!

Do u at least like kraut? Also are u a cook by trade? For some reason I thought u were.

I've never made shepherds pie with corned beef, but I suppose u r talking about the mashed lol. I will have leftover beef because this ****** is 7lbs, which will become reubens and hash. I'm pretty amazed at the quality of this brisket, for grassfed it is very nicely marbled with a nice fat cap. Must have been from our summer slaughter, not sure why it didn't get snapped up at market. My wife is going to make some crazy rye bread that takes like 8 hours this week, so these ruebens will be ultimate hipster foodie sandwiches. I even got some ketchup I fermented in the fall from my garden paste tomatoes for my Russian dressing.

For potatoes I chose nice little red ones that I will parboil with the beef and then fry them up with leeks and parsley in some butter.

Needless to say my home smells amazing right now.

I can never get potato pancakes right :(

I always make extra potatoes so the next morning I can make tater pancakes. Not sure what you do wrong but mine come out great.

oh, and here's a cabbage recipe for whoever.

Take a whole cabbage and boil it for about 30 mins, until its partially cooked.

Cook a pound or half pound of bacon, then crumble.

When the cabbage is cool enough to handle, cut the stem thing out and remove some of the top to create like a bowl on the top of the cabbage.

Sprinkle bacon in the cabbage in the cavity you created.

Dot the cabbage with butter, and all over, I even baste mine with a brush a couple times while it cooks.

Salt n pepper that *****.

Make a circular cabbage stand out of alum foil and stick that bastard on the cool side of a grill and finish cooking it.

That sounds like giant variation on an old Brussels sprouts recipe I use. Very cool idea.

I love Brussels sprouts also, tell me what you do. And yeah, the cabbage turns out really good the way I said, kind of a pain in the ass boiling it, then putting it on the grill but its worth it occasionally.
