I been wanting to make some grilled cheese lately.... my entire life I've always made the classic bread/butter/american cheese version.

Anyone make some bad ass grilled cheese you wanna share?

What kinda bread? What kinda cheese? I NEED TO KNOW!

Use whatever cheese you like. I like pepperjack so I'll roll with that if I can. I've liked wheat bread for whatever reason too.

Sometimes I'll be fancy and add stuff like bacon and tomatoes. Usually I'm too lazy though.

You should always shred the cheese. It makes for a better melt. You can use mixtures but I like to use spreadable butter, shredded cheddar cheese. and whatever bread Im feeling frisky in. I also will put some mayo on the inside. I also like to add some shredded cheese on the outside of the bread to get that crispy cheese layer on the outside.

May I ask what the mayo adds for you? Do you just like mayo or does it give it a certain texture or flavor that you like better than just straight cheese?

Like stated earlier, sourdough bread is good or even texas toast if you like a really thick grilled cheese. As for the cheese element, I like cheddar and feta, I also like to add bacon, fried onions, and tomato's.

I like some of the weird multigrain breads. We have some called Dave's Killer Bread around here that is really good. I'll use a couple of different cheeses like provolone, pepper jack, or smoked gouda. Just for a little extra kick I put some habanero ham in that ***** too. That's a helluva sandwich

I love grilled cheese because it is simple. Just choose your bread, choose your cheese, and have at it.


That being said. I'm a sharp guy for grilled cheese, but as sharp as you can find it(extra sharp colby is my absolute fav, but new york cheddar is a good one that is common). It doesn't melt perfectly, and none od that bothers me one bit. I'm also torn between multi-grain and seedless rye bread for the best bread. Multigrain has a bit of sweetness that contrasts with the cheese well, but rye and butter compliment each other nicely.

And sometimes mixing it up with some mayo on the bread. If you like mayo, that is. I know a lot of people don't.

I had considered having brinner.... I compromised and made a grilled cheese with Gouda (shredded.... I decided to take SilenceS' advice) and also made a side of crispy bacon.... I had never tried Gouda before lol I just saw it shredded at the store and figured I would try it out.... was good.
