Bring the water to a rolling boil and then shut the heat off. Let the eggs sit in the hot water for 10 minutes. Cool them immediately after by running cool water over the sink in the pot you just cooked them in. The cool water stops them from cooking in the shell. The main reason the shell sticks is because the egg was over cooked.

Add teaspoon of baking soda to the water. The age of the egg won't matter if you do this. The shells will be easy to peel off. Also try hard cooking the eggs instead of boiling the entire way. Put eggs in pot. Add enough water to cover the eggs with about an inch of water. Turn on heat and cook until there is a rolling boil. Turn off heat and cover with a lid for about 15 minutes. Drain and chill in ice bath. The yolks will be yellow not gray, and not dried out.

baking soda is the answer... not an ice bath.

Never tried the hard cooking bit, but might give it a shot.
