I'm always leery of fast food mayo. It just sits out. Like if you go to Subway, it's in that little pot with the baster thingie. Fucking gross. And then they pre-make and wrap sandwiches and put it under the heat lamp to bake and fester until someone buys it.

When I was young, I worked in plenty of food Joints. Holding the Mayo isnt a bad move. Anything in a tub is suppose to be over ICE, unless its a cooler setup. The ice setup is generally not practiced IRL, unless they are being audited by higher ups. Which is seldom. If they do add ice its not enough and its just a tub floating in a puddle of water basically
I would say skipping eating out all together might be the best move, but I guess you need the convenience every now and then. The amount of times I saw things dropped on the floor and served is mind boggling. Hot items held way past holding times, so instead of say 20 minutes, it was being used 2 hours later. Ive seen things refried 3-4 times. Boarder line rotten meat in the fridge being served up. Green beef, takes aged beef to another level. Just cut that piece off of it son. The slimy pre-rotten veg we served. YAY, good times
Hygiene, sounds good in theory. Im sure some pans today still got grease on them from the mid 90s. Definitely flavored.
