From who? What source? Did they have a transcript of what was said in that show to give you these quotes? Can they produce this transcript?

If I were speaking of like... Cubs' fans, faithful, whatever you want to use as an synonym for fans, would I put an apostrophe or not?

You mean on "Cubs" to attribute ownership of the fans (not in the literal sense)? Short answer: yes. Longer answer: while it is acceptable to write "Cubs'" when speaking in that sense, technically the proper way to do it is "Cubs's" (though still pronounced "Cubs").
