What are your recipes for making the perfect Kentucky Hot Brown?

I figured this deserves it's own thread because the grilled cheese thread is full up.

I have only had like 6 different hot browns in my life and they were mostly good and pretty consistent. To get my Bretting out of the way, I must say that a hot brown should NOT have baked poultry, hard-boiled egg, lettuce, and tomato open-faced on rye bread, and covered with Thousand Island dressing, served cold.

not a big mushroom guy but portobellos grilled with butter and Italian seasoning are pretty much fucking awesome with a steak

Get a large Shiitake, turn it over so the fins are exposed...pour some olive oil in there, and then grill it with those fins up....Put it on a hamburger bun with lettuce and tomato...yum
