One of my favorite brinner go-tos is just fry up a serving of shredded hashbrowns, then fry up 2 over-easy eggs and lay em on top of the taters, hot sauce on da eggs, omnomnomnomnom.
Tacos are good, but too much work/ingredients if you are eating solo.... is this just you or more people?
I do love breakfast for dinner. I may have to re-think my options here. It'll just be my wife and I. We always seem to have a plethora of fresh veggies and I HATE throwing food away, which is why I thought of tacos. I don't really think tacos are that difficult lol. Brown some meat and throw in some seasoning. Shove it in a shell and put some veggies/sauce on it.

Just make less depending on how many people. You could add almost anything else in them too, maybe garlic or potato chunks.

- Preheat an oven to 350 degrees F (175 degrees C). Lightly grease a 12 cup muffin pan.
- Mix ground beef, soup, onion, bread crumbs, eggs, salt, and pepper in a bowl. Scoop mixture evenly into prepared muffin cups.
- Bake 1 hour in the preheated oven to a minimum temperature of 160 degrees F (70 degrees C). If desired, remove from oven after 50 minutes, drizzle ketchup on the top of each muffin, and return to oven for an additional 10 minutes.
