Have you tried using butter on the cast iron instead of olive oil? Sounds like butter might be better.

Awesome, I found a homemade gyro meat recipe from the same guy. Trying it today...

This worked perfectly btw. I did a two pounder, half beef.

I didn't use his sauce recipe because I have full fat Greek yogurt. I minced cukes and garlic and added fresh dill and a little lemon zest. Used naan instead of pita.

Another protip, sliced onion thing on a mandolin and soaked in milk for 20 min then rinced. It takes a little of the acid out. I like my gyros loaded with onion. Also, sport peppers ftw. I actually bought a non organic tomato for this... Dedicated to firsttimer.

Mods, can u break this gyro thing off into a new thread? It's unbelievably better than gyro stand product, and maybe gpphat can weigh in with a "stacked meat slab" variety. I'm inspired now, for next week I'm gonna do an old staple, Greek style roast chicken with them lemon potatoes. Might even try baklava...

This gyro recipe is excellent. I also did 2lbs using lamb and beef. I added a bit of clove to mine and also went the naan route. The sauce recipe is pretty good, but because I made so much meat I also made a Halifax sauce with sweetened condensed milk, garlic, onion and a bit of vinegar. Both sauces go great with this meat recipe.
