my only modification is to do warm water/yeast for 15 minutes prior to mixing in the other dough ingredients. didn't work out the OP way. Also, only use cast iron skillets for this.

This worked perfectly btw. I did a two pounder, half beef.
I didn't use his sauce recipe because I have full fat Greek yogurt. I minced cukes and garlic and added fresh dill and a little lemon zest. Used naan instead of pita.
Another protip, sliced onion thing on a mandolin and soaked in milk for 20 min then rinced. It takes a little of the acid out. I like my gyros loaded with onion. Also, sport peppers ftw. I actually bought a non organic tomato for this... Dedicated to firsttimer.
