Any basic hot meal can be converted into a skillet. Heck, any casserole can be a skillet.

Maybe I have it wrong, but seems like such a general question, like asking what are your favorite roasting pan recipes? So based on my perception(and I'm personally open to being corrected), I'm curious to know if there are any meals that are strictly skillet(and not just because they are bakes/served in a skillet).

Eh, you can do most anything in a caste iron skillet. Just be careful with more acidic foods, I was dumb and was simmering tomato sauce and it took a year old seasoning right off.

Ouch. I haven't used my cast iron in years and probably should. I would welcome any good (but simple) ideas.

Heat a cast iron skillet. Through in a glob of butter. Then throw on a nice steak. I prefer a thick NY strip. I like Montreal steak seasoning as well. Sear both sides for a few minutes, a little longer if you like it well done.

For sides I'd go with sweet potato fries and asparagus.

I've never tried the Montreal seasoning. I like Chef Paul Prudhomme steak magic.

I love Montreal steak seasoning. We have the mild and spicy. The spicy type is good in chili too.

Montreal Steak Seasoning can go on anything...my favorite seasoning other than garlic powder

Got a great breakfast frittata recipe for a cast iron skillet over medium heat

Chop approximately 12 strips of bacon and cook until crispy
Remove bacon bits but leave all the grease
Add in a shitload of spinach, like way way more than you think. About 5 handfuls
Don't worry, the spinach cooks down to almost nothing
Spread spinach evenly, add back bacon bits, add 1 cup of whatever shredded cheese floats your boat. My family loves something smokey in this recipe.
Pour one dozen whisked eggs into skillet
!!DO NOT MIX ANYTHING!! Just let it cook until the egg mixture gets a little crispy around the edges
Pop the skillet into a 350-ish degree oven until the top of the eggs are golden.

Remove, cut into wedges, add jalapeño relish(one of my favorites) and enjoy

I think broccoli would work better. Any veggie that can be chopped pretty finely, really

Edit: I guess any veggie can be finely chopped, that's just not how I think to cook asparagus

Thanks. It sounds like you need a pretty big skillet. I guess I can downsize the recipe and make it for two peeps in a smaller skillet.

Yeah, we make this in a 12" lodge pan. We also make it in our big pan and take leftovers to work. The only thing about that is the eggs get a bit rubbery being reheated in a microwave

My wife made corned beef hash from a can this morning. The whole house stinks.

apple tarte tatin in a skillet all day... easy n yums..

pan on stove top.. add sugar and a lil water to make a thick syrup.. dont turn into caramal.. you can but its going into the oven.. take off stove and start to layer

add a layer of thin sliced apple... sprinkle cinnamon sugar... add another layer of apples.. mo cinnamon sugar.. repeat til top top of pan..

cover with a single sheet of puff pastry.. poke a couple holes...cut to fit pan... place in a preheated oven at a lower-meduim longer cooking temp... so apples will cook with pastry.. otherwise da pastry will cook and da apples be raw if cooked too high and fast..

when finished... turn it over and remove from pan... so puff pastry becomes the bottom..

make whip cream... add to individual slices.. or juss add ice cream or both.. whatevers ya want..

similar to this thick single apple layer one..

edit: mo similar to what it be looking like.. expect tat be a pie crust.. puff pastry be flatter and you can see the side build of apples in mines.... i go circular the whole way..from center out.... i dont like they middle surrounded by da circle..
