I've got another one. This is a brussels sprouts side dish that is fucking amazing. It is best to make in a very well seasoned or enamel lined cast iron pan. We've made it in both our skillet and an enamel lined french oven.

Chop and cook enough bacon to make 1/2 cup cooked
Heat oven to 375
Over medium stovetop heat melt 3Tbs butter and add a few cloves minced garlic, 1/2 tsp salt, & 1/2 tsp spices(however you want to flavor it)
Add in 2 lbs halved(or quartered) brussels sprouts
Cook until tender
Add 3/4 cup heavy cream and stir a bit
Add 1 cup shredded cheese. We've made it with all one flavor or split in half with a regular and a smokey cheese. Both are awesome
Don't stir in cheese, just let it melt on top in the oven you preheated. Cook until cheese is melted and golden.

You're going to want to take a large helping of this but restrain yourself, all of the cheese and butter makes this very filling
