Fall is here and I like to eat a lot of soup before the holidays. I make a lot but I'm looking for something that may be different or an improved recipe over say clam chowder or a basic vegetable soup. I made Pho once, it was ok but felt like something was missing. If you are going to be a jerk don't post anything. Thanks

Didn't you make chicken salad with ketchup/mustard/relish packets from McDonald's yesterday?

I really want to know your Pho recipe...

Packets left over from various fast food places. I didn't keep the recipe but I remember roasting the onions and beef bones then simmering for hours. Skimming off the foam every once in a while. I think the flavors were off balance a bit. Too much rock sugar, vinegar maybe.

There used to be a poster here named Vick Ashley who gave me a bomb white chicken chili recipe. I'll see if I can find it.

I have a fail proof tomato soup and rice recipe. Take a can of Cambells Tomato soup. Open can pour contents into sauce pan, add a can of milk, add homemade rice. Heat to boil, let cool for a little while, serve to kids. mmm mmmm good.

My sweet potato onion soup recipe:

1. Caramelize two medium sized onions and 5 cloves of garlic cut in half. or at least wait until they aren't really white anymore. I use avocado oil.

2. Toss in 5 cups of cubed sweet potato (I prefer Japanese Sweet Potatoes) and mix with the onions. Let it sit, covered, for 5-7 minutes.

3. Poor in 4 cups of bone broth (I make my own), bring to a boil, and then simmer for about 20-25 minutes until you can easily pierce the sweet potato with a fork.
-You can use plain bone broth... I add salt, black pepper, garlic and onion powder... Otherwise it could taste a little plain afterwards.

4. Put it in a bowl and use an immersion blender to make it smooth.


Simple, and really fuckin good.

With all do respect, I like recipes from scratch. The less processed the better. I understand though. I did a lot of short cuts when I had a growing family. Thanks for the input.

Now that's what I'm looking for. I'm going to give that one a go.

This time of the year is chili or ham and beans for me. Of course wife wants to make a chicken veggie soup for the game. She loves food channel.

When you make chicken soup, use wings because they have a great deal of collagen - like bones for your pho. Add some ginger along with your normal celery, carrots, garlic etc. and top with green onions. I prefer potatoes to noodles because noodles get too bloated when they sit in the soup for a while. Instead, when you get down to just the broth, cook some pastini in it. Acine de pepe or the like. Eat it with broth and Parmesan.

That sounds interesting and I never heard of the chicken wing idea but I see it makes sense. I am not googling but assuming pastini is some type of pasta? I've Never heard of Acine de pepe either. some kind of pickled peppers or giardinera? Thank you.

Soup pasta, very small pasta that's meant to go in soup. Acini de pepe is a type of pastini.

As a side note, giardinara is great in chicken soup too. I always get a few jars of Marconi when I'm in Chicago because the stuff you can get outside Chicago is terrible.

Simple Butternut Squash Soup

A 2-3lb butternut squash 6 cups (or so) of chicken broth
One onion chopped up
To tablespoons of butter
Nutmeg

Saute the onion in butter, add the broth and squash and simmer for 20 minutes or more
Blend with an immersion blender Add nutmeg and ground salt and pepper

Enjoy

It's pretty good. I usually add some cumin to it.
