Simple Butternut Squash Soup

A 2-3lb butternut squash 6 cups (or so) of chicken broth
One onion chopped up
*To tablespoons of butter
Nutmeg

Saute the onion in butter, add the broth and squash and simmer for 20 minutes or more
Blend with an immersion blender Add nutmeg and ground salt and pepper

Enjoy

This time of the year is chili or ham and beans for me. Of course wife wants to make a chicken veggie soup for the game. She loves food channel.

Nice. My wife is the one that posts a million awesome looking receipes on Facebook then never freaking makes them. I have to beg her to try them. It's always, "One day, when I'm not so busy." I'm like GD, THOSE LOOK GOOD.

I personally think it's way too much work and time. I'd rather just go to a solid vietnamese joint and pay $8 for a giant bowl of it. But we are blessed with a big Viet restaurant scene in my area.

Agree. When I make it, I make several gallons of it. If I made a normal size pot of the broth I feel kinda like a stupid hipster idiot.

It is a lot of work but I like that sometimes.
