Not to fight, but Bourdain's quote speaks of the ambiance per se instead of the food. In fact he starts off by saying better food might be had elsewhere and then addresses ambiance for the remaining quote.
He is saying the food is unique compared to any other place in America. Im sure there are restaurants all across America that has great food, but as a whole, I will take New Orleans.
