Sounds good, but I'd make on suggestion. Instead of just going 2 pounds of ground beef, go one pound ground beef, one pound pork.

I mean you don't have to, it still sounds pretty good.

Good suggestion...will look into it. Probably gonna have to cut everything down to half-portions anyway. I'm using one of those three-way crock pot things...like this...

So I've already got a sausage/cheese/salsa dip on, as well as li'l smokies. The meatballs are going to be in the 3rd one. Hoping to get 20-30 in there. Got one lb of beef, may see if I have a 1/2 of ground pork to add to it.

Also: I'm done providing drinks. Too many fucking requests go into that shit.

There's always one smartass in every group that says "yup, I'll bring drinks". Pawn it off on them, but give them super-specific directions.


Or just got a shitload of beer/liquor.

Here's the thing, I drink Bud Light or micros. I'm not buying micros for all my friends, because I'm not rich. I'm the only one who drinks Bud Light, so I don't want to hear them complain.

Inevitably, you'll get the guy who is the fan of Coors Light, then you have to make sure you get the mixers and liquor. **** that. I'm already feeding you, so bring your own Bacardi and Sprite for your chick and leave me alone about it.

Then you have my girlfriend, who is typically a beer drinker but has to do the mix drinks because the other girls are doing them. I make her buy her own too.

just a quick FYI, if anyone does indeed try these same meatballs...add some black pepper, chili powder, and liquid smoke to the sauce. Doesn't make them hot or barbecue-ey...just a nice little smoked flavor.

This is good advice. You don't want to over-do things especially when it comes to meats. Let the natural flavors mix in there, and add accordingly. Put too much in it, and you ruin it imo.

Over-seasoning use to be my biggest kitchen flaw. Just had to learn to keep in mind, you can almost always add flavors, but can't take 'em out. Add slow, and mix the pallet up. Don't want 3 bbq items. I've got a smoky, a spicy, and a neutral.
