I'm doing same with a 5# grass fed chuck roast that's surprisingly well marbled as well, all night. Tomorrow i'll smoke it over mesquite for an hour and have some amazingly tender "pit beef"I just put 2 1.5" thick porterhouses in the sous vide. Marbling looks awesome. These are gonna be great.

edit: i guess it won't be pit beef because it isn't grilled and I probably won't be able to slice it because it will be able to be pulled BUT i will do the sammies with raw white onion and horsey mayo. maybe even some gorgonzola
