Do I have a recipe for two different gumbos and a potato salad. I mean yea, but I'm not going through that effort. Lol

Quite simple my friend, put potato salad in a line right down the center of a bowl. Fill one side of the bowl with seafood gumbo. Fill the other side of the bowl with chicken and andouille sausage gumbo.

Thanks, impressed that you made not one, but two different gumbos. That can be quite a bit of work.

Out here in the Bay Area we serve gumbo in a sourdough bread bowl, a very tasty carb-bomb.

Dark roux on the seafood gumbo. Lighter roux for the chicken. I also make my gumbos pretty thick. Not reduced down heavy cream thick, but a nice thickness

Leftovers from last night: cod fillet baked in a homemade tomato-cilantro-jalapeno sauce, over a bed of thinly sliced red potatoes.

With water. Preferred it last night with a Scrimshaw pilsner on the side.

Poke Bowl (Albacore & Salmon), on mixed greens, all the toppings, spicy sauce. Could eat that very meal 3x/week easily.

I decided to try the meal prep thing with the wife this week. I've been eating grilled chicken breast, broccoli, and rice. It's nice not having to make a lunch each day.

Turkey and Avocado Sandwich with chicken noodle soup. Don't know why, but soup just sounded good today.
