Making them. Got 10 lbs frozen from costco. I am steaming them for 10 minutes, then in the fridge for an hour. This apparently renders a little fat so when roasted the skin "fries" crisp. I will smoke for 20 min, grill, then spin in homemade hot gravysauce. With this, i will make a roasted red potato salad, dressing a mix of cider vinegar provence herbed dijon and mayo, with finely diced red and green onion. Dont be jelly, poast your wingz.

Sounds good, I've never steamed them first so I can't really speak to that but the rest sounds delish.

Did you ever try that wing recipe I gave you a while back? (The tequila wings) You really need to make those, brobuddy.

Semi related; I wonder what kind of kickass wings they eat in the outback? I'll have to report back on that after I talk to my sidekick.

Sounds like a bunch of fucking shit. Naked fried. Tossed in buffalo or homemade BBQ. Then put on the grill then retossed served with German hot potato salad and homemade ranch or any kind of side you want. Homemade cheese sticks are my fav. It take perfection but when done right you can not beat a fried piece of fucking cheese.

They were good. had to grill them after smoking for 30 minutes and they crisped up nice, just like they'd been fried. After these wings, they really should promote me to full mod on here.

Steaming first is brilliant.

I am not getting my new grill until Thursday. Plus I have to assemble it and get propane... so more than likely it won't be ready until Friday, LOL.

Wings are my favorite food group so I'm definitely going to try this.

My wife makes them by dredging in corn starch and then baking til partly cooked through. Then straight from there into the fryer. Man they are so crispy even when soaked in gravy. I have to say that her wings are some of the best I have had anywhere. The steaming idea is interesting though. May be worth a shot!

Never even heard of it. Is it a country-wide thing? Nevermind. I guess I could google it. Ah. Just London? I didnt remember seeing it when I went to Uni in Sudbury.

Do steaming the wings make that much of a difference? Especially on a frozen win for ten minutes? It sounds like it's just a way to defrost quickly without a microwave, no?

It's a franchise for sure, but I'm not sure how wide spread it is. Their wings are something else though!

I was overthinking I wanted crispy skin wings without having to get out a deep fryer or dump a bunch of lard in a big pot and get my stove all messy? I was overthinking that I wanted wings with super smokey flavor infused into the meat? Or was I overthinking that I didn't have enough cooking oil/lard to make 10 lbs of wings? Or was I overthinking that I didn't want to stand around in the kitchen for batch after batch of fried wings?
