It's not a mystery it's venison which is a fancy word for deer meat, and I read in a article that it is deer meat that was raised in New Zealand so they even solved the mystery of where it came from. Let me know if you have any other questions.

My uncle in western NY gets venison sausage from an Amish neighbor (they retired in the sticks). It's fantastic. No gristle, growth hormones, no gamey taste... it's perfect on cheese and crackers.

Yes, venison jerky is fabulous. That's probably due to the smoking and seasoningsee masking the gamy taste.

After butchering it, soak it in ice water for a few hours, then brine it in refrigeration for a day or so. Draw that blood out, both the meat, and marrow.

Deer, rabbit, whatever. Cuts that gamey taste out.

Venison jerky and sausage are good (if done well). Elk is far superior to eat imo.

So Vash, how was the venison from New Zealand. I would like a report from your roommate, mom and mom's BF as well. What kind of dipping sauce did you use?

I thought it tasted very nicely and was very tender meat and tasted very differently than a beef-type steak I guess that is what you guys are calling "gamey" but to me it just tasted like it had a flavor that wasn't just salty or metallic. There was no dipping sauce it was a sandwich with the steak on a bun with some frizzley onions and and they told me the sauce inside of the sandwich was made of a red wine and had juniper berries mixed into that. I have literally zero clue what juniper berries are but it went well with the deer steak and did not taste like chemicals.

My room-mate did not want his when he looked at it but when he bit into it he was very pleased with the surprise and he ate his whole sandwich and wanted to buy the other two off of me. By the time I drove over by my mom's she and her boyfriend were watching movies so I just left them on the kitchen counter, mom texted me later and just said they were good. If they do this again I will probably buy one but not a bunch of them, it cost me over thirty dollars and that was before curly fries!

That was very thoughtful to purchase venison sandwiches for all your friends and deliver them. Glad they were up to par.

My BIL who lives in Ketchikan AK, bagged a couple of Sitka (Blacktail) bucks, and brought me a bunch of it, in addition to a shitload of Salmon, Halibut, King Crab, and Moose.

Maybe it’s the Sitka’s diet up there....but with no bleeding, and no brining-there is ZERO game flavor. The burger was more tender than Angus. Very good. The back strap could be cut with a fork.

My freezer is full of deliciousness.

Drove down. Packed a few large chests in Dry Ice.

My wife went down to AZ for a family visit, then brought ours back up to Vegas with her, packed in coolers.
