March is kind of a crap shoot. Some days definitely in the 80s, but we usually have a few cold fronts come through that drops us into the 60s for a few days. Most of the water parks are heated.

March is a decent time to come, but can still be busy. I'd say late Sep through the beginning of Nov is probably the least busy, and it's usually consistently warm that time of year.
Edit - hurricanes could impact this if you're unlucky.

Winter Park pro-travel tip. Bunch of good restaurants down there along Park Ave. Prato, Bosphorus, etc. Also take the boat tour.
