I've been wanting a smoker for a while. My neighbor made some smoked pulled pork-- and it was the best I've ever had.
My brother has exploded into smoking with it being his new hobby, he's got a butcher on taylor street that he gets mass quantities of meat from and has built his own barrel smokers now. he's loving it, takes a lot of time but he's on a smoker board and getting really into it. He obsesses over hobbies for a few years then moves on. Used to be computers, then stereo equipment, now smoking. NO kids, doesn't drink, good job and wife so he just pours all his enthusiasm into things and they usually turn out great. He has even been cutting and curing his own bacon to go with the meat his smokes and grinds himself. It's so good. Pork butt is one of his specialties. And his bacon was pretty awesome except he can't cut it thin enough so it come out super think.

The one thing I cannot stress enough-- and you reminded me of it Mass-- find a good butcher/meat market (not Jako's meat market).

I drive about 30 minutes to Elburn just to buy meat from their meat market-- and it's worth it over most of the supermarket garbage.



Marcy's uncle cooks hogs, and has the bacon down pat. I need to ask him how he gets his bacon to be so amazing.

He goes all out and cooks them underground.

Thats some serious dedication. I went to a Luau in hawaii, and it was the best pork I've ever had. Hands down.

Do you get asper pee? I had read some time ago that it is based upon your genetic makeup. For some it is quite distinct (me) but my wife and daughter don't even notice.

Chicken Fetticini Alfedo with artichokes, shrooms and olives



This has several steps and will make a mess of your kitchen but it's worth it.



Drizzle 4-5 chicken breast tenderloin strips or 2 boneless chicken breasts with olive oil. Then sear on flat iron grill till each side is browned failry well. Remove and dice into 1/2-1 inch chunks and rest (Don't worry if there undercooked, they will be cooked more later)



In a sauce pan prepare two packets McCormick's Alfredo sacue following package directions or if you care to make a rue and do it yourself with some heavy cream ect... I'm lazy and the packets work just fine. Set aside when right consitancy.



Dice the following;

1 jar/can whole artichoke hearts into quarters

1 medium onion diced into bigger pieces 1cm x 2cm or so

I small package mushrooms. The "monterrey" type package works fine

Rinse

Mince 4-5 cloves of garlic (or throw in 2 tspn of garlic powder while sauteing)

Melt 2 tbspns of butter in a large frying pan, saute the veggies by themselves for a few minutes, then throw in 1 small can sliced black olives and throw in the following spices



1/2 tspn ground thyme

1/2 tspn ground basil

1/2 tspn parsley flakes

1 tspn oregano

1-2 pinches of whole rosemary

pinch of black pepper

1/2-1 tspn salt to taste.



Give it a good stir and let it saute another minute or so then throw in the chicken pieces plus 1 cup of chicken broth and let simmer 10-15 minutes. When the broth simmers is simmered off quite a bit add the alfredo sauce.



Cook Fetticini according to package directions, rinse and mix in.





Serve with a nice salad

Crockpot Chicken Breasts





Spray crockpot with vegetable spray to prevent sticking



Place 4 boneless, skinless chicken breasts over bottom of the crockpot.

Cover the chicken breasts with slices of Swiss cheese.

Mix 1 can cream of chicken soup with 1/4 cup milk and spread on top of chicken and cheese

Sprinkle a package of chicken flavored stuffing on top of the soup layer (just the dry mix do not prepare stuffing)

Melt one stick of butter or margarine and poor evenly over stuffing mix.

I make some sick jambalya, but you ain't getting that one. Haha. Made a batch and some ribs this weekend. Disappointed in the ribs, but the jambalya was the best yet. It's pretty simple actually. I do a chicken and chorizo or portugese sausage. onions, carrots, celery, green pepper, garlic, some other stuff all whipped together and then cook it for a day. Let it sit in the fridge overnight, then reheat and it's good to go. It's one of the few dishes we have that when we have left overs we eat it for days to come. I'm a big fan of slow cooking and crockpots. Stuff is always better the next day too.

Which reminds me, I need a crock pot.



For all you crock pot peeps, do yourself a favor and buy the plastic liners for it. Zero clean up, just throw em out..

You can thank me later.

I just looked those up and they seem great in theory but seem like they would be annoying to use. Hard to stir and such.

I have tried it with boneless pork chops too except it had cream of onion soup instead and it was yummy too.

I'm doing this today in the crockpot with some left over slow roasted pork shoulder we used for tamales at christmas. The stew I had while skiing at Taos was my inspiration, and after looking up a few versions on the internet



Green Chili pork stew



Add to crockpot

4 carrots peeled and sliced large

6 small yellow potatos diced large, skin on (rinsed/washed of course)

1 onion diced coarse

2 cans chicken broth

1 7 oz can diced green chilis

4-5 minced cloves of garlic (or sub 1-2 tspn garlic powder)



Spices

1 tspn salt

1 tspn black pepper

1 tspn oregano

1 tspn cumin

1 tspn cilantro

1 bay leaf

1/2 tspn ground sage

1/2 tspn ground savory



I'm going to cook on high 3 hours then reduce to low heat and tear the pork shoulder into pulled pork strips and throw it in on low for another hour or 2.



I'll post tomoorow on how it turns out

Same here, but there is a little white wine in there as well.

Not really, at least for soups and chili. The weight/ fill-level of the liquid keeps the liner tight..

Of course you can't grind at the bottom with a metal spoon, but in a crockpot nothing should really be sticking to the bottom anyways.

That stew was money. I will cut back on the pork next time though. Was trying to use up leftovers and put it all in the pot.

1. Cut slit about ¾ depth lengthwise along beef hotdog.

2. Stuff dog with shredded cheese of your choice.

3. Wrap dog in strip of bacon from one end to the other, use a toothpick through at each end to hold bacon onto dog.

4. Deep fry at 400º for 4 minutes.

5. IMPORTANT: Remove toothpicks before putting on bun to eat.

6. Tell all of your friends how to do this.



I tried this recipe, but with a brat. It's brilliant! Perfect choice for a breakfast! Along with the recipe, I simmered garlic and onions in beer to make it a perfect topping for the recipe. Highly reccomended. Instead of putting it in a bun I cut it up into slices and coupled it with eggs with the onion combination sprinkled on top (coupled with eggs of your choice it makes a great meal)



As far as using it with a hot dog, I would imagine this recipe would be awesome, I will try it as soon as I get a chance.
