With all the egg laying chickens we have , we have a egg dinner night.

That recipe is solid if you add more spices. Definitely serve w/ pita, or something similar.

I do have 16 laying hens, lolIf you have lots of eggs to use, one of those baked breakfast casseroles could be good.
Often they just have like bacon, sausage, cheese, egg.... layer of cheese on top.
Those are good, and if you don't eat it all, pretty easy leftover to heat up.
