Tangential, but I was considering doing eggs over easy laid on top of some warmed-up leftover pulled pork.

What say you?

You ever try shakshuka?

That recipe is solid if you add more spices. Definitely serve w/ pita, or something similar.

Yeah we do that one regularly, with Naan. Also this one:

I have a dozen in fridge to use up.
Probably just going to do an omelette tonight or tomorrow for dinner.
Nothing fancy shredded cheddar & ham
Got to make it kid friendly.

If it is Cochon de Lait then sure, makes a delicious benedict

idk, i think just a nice apple cider brine would suffice, no?
Be better if ya stuffed it with apples and a spicy cinnamon mixture and hit dat quail egg on top with a fried bushel of carrot strips.

What about some pear, bleu cheese and some french toast croutons up in there?

If you have lots of eggs to use, one of those baked breakfast casseroles could be good.

Often they just have like bacon, sausage, cheese, egg.... layer of cheese on top.

Those are good, and if you don't eat it all, pretty easy leftover to heat up.

You have sixteen layers and only a dozen eggs in your fridge that need to be used???? How many days a week do your hens take off?

Sounds like it's time to make some chicken broth buddy.
