You’re welcome. We also add cheese and green chili occasionally, that’s about as experimental as my wife will let me go. Obviously the possibilities are endless to dress this up

You can make egg cups.
Basically individual quiches made in cupcake tins with deli slices as the cupcake liner.
There is a bunch of good recipes on google but here is a link to one similar to what we do.

Edit: that link shows whole eggs being used. We used to scramble up our eggs and mix with bacon pieces and cheese etc rather than whole eggs. You get the general idea though, and a quick search for egg cup recipes will lay out a bunch of alternate options.

The peppers are: green chile peppers
Chili is the stuff that @HawkBear likes to eat with cinnamon rolls. That stuff would be rancid if it was green.
Green chile is the stuff that is great on cheeseburgers and eggs etc.
Huevos Rancheros covered in green and red chile sauce is amazing.
