Would be a good change of pace and allow me to do meal prep once and get several meals out of it, and just need to heat up in the microwave.

1/2 lb bacon, chopped
A handful-ish of potatoes O’brien
8 eggs
Brown bacon, add potatoes when the bacon is just barely brown. Before the potatoes and bacon are finished season with whatever you desire, I only use pepper and garlic salt. When the potatoes are brown, add eggs and scramble.
It’ll take a while longer if you add the potatoes when they’re still frozen but this simple recipe is a staple at our house

Yeah I wasn't going to be condescending because that's your job but seriously, omelette and a salad is super easy no-thinking meal for any time of day. Gets fancier with casseroles or quiche I guess but it's all eggs at the end of the day.Any omelette would suffice for "dinner food"
