I hope it's not that Aldi cottage cheese.

As a fellow Aldi guy you got my back, fruit on cottage cheeses is gross, savory on CC is the best way to enjoy it.

I just tried something this morning i really liked. I hate throwing food away, i dont care what it is , to a certain extent.
I had left over mashed potatoes from two nights ago.
Eggs over easy on a bed of buttered mashed potatoes , little garlic salt and pepper. I now am more encouraged to save our mashed potatoes. It was so good.

I had left over mashed potatoes from two nights ago.
Eggs over easy on a bed of buttered mashed potatoes , little garlic salt and pepper. I now am more encouraged to save our mashed potatoes. It was so good.


Corned beef potato cakes next time.

There you go, leftover mashed potatoes are a blank canvas of potential. I add onions, cheese, seasoning, maybe a protein (corned beef sounds great) form them into patties like a burger and fry them up, crispy on the outside smooth and delicious inside. Better that the night before.

I've never used the waffle maker for that, I probably will in the future.

Also I threw some leftover brisket into a bowl of chili. Yes, it was epic.

The other night I made a very underrated meal. Bought those little bags of Doritos. Then browned some burger, put in taco seasoning. Cut open a couple small bags and crunched up the chips. Put the taco meat in, lettuce, diced tomatoes, sour cream and cheese. It was a great combo.
