There you go, leftover mashed potatoes are a blank canvas of potential. I add onions, cheese, seasoning, maybe a protein (corned beef sounds great) form them into patties like a burger and fry them up, crispy on the outside smooth and delicious inside. Better that the night before.
I've never used the waffle maker for that, I probably will in the future.

OT - IMO creme fraiche is one of the most overrated foods ever. My personal list of foods that are not nearly as good as most people believe:
Heart of palm
Mayo
Mac n’cheese
Radishes
Celery
Bacon (only talking about the really cheap stuff that’s all gristle)
Foie gras
Black olives
Vanilla ice cream (straight-up, w/o toppings)
I've literally never once heard anyone discuss the greatness of Hearts of Palm. Or Radishes.

I'm not opposed to keeping frozen salmon around. Green onions easier to work with and more keto friendly.Agreed. Fresh salmon or smoked salmon. Both work. Maybe some red onion and or creme fraiche. Maybe capers. Green onions if one so inclined.
Nothing wrong with celery and no such thing as bad bacon. There's only good and better bacon. Best to get uncured so stock up when you see that on sale. The main thing wrong with mayo is the cheap oils used in it. Easy to make your own and you get to pick the quality oil, such as Olive oil or avocado oil to put in it, as well as better quality eggs. My favorite ice cream has always been plain vanilla, French Vanilla, actually. In the summer, I still pick a few days here and there when I'll have a rather big helping of it.Mac n’cheese can be outstanding, don't hate cheese because Velveeta sucks ass. A nice sharp cheddar mixed with some spicy pepper jack works great.
Radishes are crunchy and delicious, any savory salad without this magical little root is just a pile of sadness.
Bad bacon is not good, average bacon is delicious, great bacon is manna from heaven.
I stopped eating black olives years ago when I found out about kalamata olives.
