Yet when I put cheese on salmon he gets all snooty as if it requires carbs and other shit as well. The thing with eating salmon on keto is there are 2 kinds of salmon, wild caught which is considered the far healthier version yet low in fat and the Farm raised which is high in fat but that fat comes from a diet of processed fats and contains unwanted contaminants. keto is not just about high fat though. Like Paleo, in emphasizes non-processed sources and the rule is it's better to add your own quality fats to avoid the bad ones. So get the wild caught and add any of a number of quality fats rather than opt for the lower quality farm raised.

As long as you are using quality cheese on you salmon you are correct. Farmed salmon sacrifices a lot as compared to wild caught. But cheese on salmon? What kind of cheese? I am intrigued.

I do like smoking Salmon that is farm raised as it does have that fat you mention.

I think if you are smoking salmon, farm raised would be fine, too. I haven’t done it a lot. I might struggle with smoking something like Copper River or similar salmon.

Cause ketchup doesn't have fat. Talking about ways of adding fat to salmon that's lower in fat. Don't put cheese on that often but something I feel free to do when the mood allows. Usually baste it in butter or ghee, sometimes adding lemon.

Another great salmon topping is sour cream mixed with a ton of dried dill, sat or garlic salt and a pepper. White pepper if you want it to look prettier. Dill is great on salmon so why not add a shit ton of fat? For those so inclined.

I make a compound butter, fresh dill, roasted garlic, lemon juice/zest s&p. I cover the salmon fillet with that including the skin side. I put a (food grade) soaked cedar plank on the grill as hot as it goes, untill the plank is searing. I turn down the temp and put the fillet's skin side down and you can hear them sizzle, crispy skin with the garlic lemon dill is amazing, wife doesn't like it so I get her's too. I also put lemon slices on top, mostly for aesthetics. I kept working on changing and perfecting the recipe for years, one example, I started off using raw garlic, that was way to strong. I finally landed on this and this is the only way I make salmon now. It is always delicious.

It looks a little like this but more melted butter on the plank, basically taking a healthy meal and turning it into a delicious cholesterol filled nightmare. Yes, I did try it using very good olive oil, not as good.

Yes i agree Gus, but to my kids it's like weird. They like to put ranch dressing on fries.
Mix ketchup and ranch to go with your fries

OT - IMO creme fraiche is one of the most overrated foods ever. My personal list of foods that are not nearly as good as most people believe:

Heart of palm
Mayo
Mac n’cheese
Radishes
Celery
Bacon (only talking about the really cheap stuff that’s all gristle)
Foie gras
Black olives
Vanilla ice cream (straight-up, w/o toppings)
Take out bacon radishes and black olives........

There is a back story to this! I normally take a salad to work and I put blueberries on it. I forgot a dressing so I went down to the cafeteria and all they had was ranch. Little ranch, little blueberry action and I was pleasantly surprised. I'm not eating blueberries and dipping them in ranch. Idiot
