Brine them, fry them, toss them, then throw on grill to caramelize. Thank me later

Been doing homemade wings this past weekend.

No breading, just season the wings, put em in the deep fryer for 12-15 mins.

Sauce em with store-bought buffalo sauce.... Hooters or Franks.

Who else does wings at home, and how do you make em?

@HeHateMe sous vide or nah?

I do this most weekends
Never any breading.

I do Garlic/Parmesan
Old Bay
My sauce is butter/Texas Pete 25/75

My dad has been making his in an air fryer lately. He said they come out really good that way. I have yet to try them though.
My wife bought an Air fryer and it wasnt big enough. It took 18 mins for 4 wings. I ended up doing 8 wings in the Air fryer and 40 or so in the deep fryer-

That said though, the Air Fryer tasted fantastic.

Pretty much Frank’s hot sauce recipe on the bottle. Baked or grilled. Homemade blue cheese dressing.

@Ares have u ever made an Asian inspired wing sauce? There is a lot of diversity there, from thai curry, to soy-miso, Korean sticky, to Filipino adobo.

I made one throwing together equal parts fish sauce and honey, many garlic cloves and a spurt of catsup, dash of chili paste. I guess it was basically a Vietnamese style before I put the catsup in, just wanted it to taste a little less briny, was awesome.

I have not, perhaps I shall.

I do need to try to avoid sugar tho.

I have a simple oven recipe that I'll do every once in a while that makes them come out crisp af because I don't have a fryer.

Place them in a gallon bag with a small amount hot sauce, salt, pepper, and what ever else you want. I usually just keep it simple. Toss them.

Dip them in flour and place on a pan. The key here is then placing them in the fridge for an hour. This makes the flour really stick. Pull them out of the fridge and sauce them up. I do a bottle of buffalo sauce and a stick of melted butter. Place in oven at 400 and sauce them every 15 minutes for an hour. They come out crispy despite not being fried.
