I could go in a couple of different directions with it.
My first instinct is a pulled pork sandwich with a mustard-vinegar sauce and plenty of pickles, smoked ribs, collared greens, black-eyed peas, fried okra and pound cake.
But I'd also be okay with eating a shitload of Mexican food.
I'd also be okay with breakfast. My dad's last meal was eggs, biscuits, country fried steak and cream gravy. I made it for him. Throw in some bacon and sausage, and I'd be happy with that.

This is a myth FYI.... there is nothing a diabetic is wholly restricted from eating.
I could eat an entire box of Oreos if I chose.... I would probably need to inject myself with like half a day's worth of insulin to counteract all the sugar, but once I did my body would process the box of Oreos like any other person.
That myth came from 20+ years ago when artificially produced insulins sucked, so to be safe in trying to manage blood sugar, many diabetics would abstain (or be forced to abstain) from eating high carb/high sugar foods.
I was diagnosed when I was 10, neither my Mom, Dad, nor my doctor ever once told me there was food I could not/should not eat in the last 18 years.
The parameters around what you should/shouldn't eat are the same for diabetics as anyone else.

Not in any sense more than normal people really... in my view I should avoid eating a package of Oreos just as much as the next person lol.
