Back in my high school/college days, I used to fry spaghetti with ketchup. Throw in some slices of hot dog, and that shit made for a surprisingly good, cheap meal.

Perhaps they were trying to make their gravysauce more "rustic" by having big chunks of stuff so you are more engaged with what ingredients you're eating? It's a pretty big trend in food these days...

i usually make a pan alfredo..

hot pan..

throw in some good shaved Parmesan.
let the cheese melt (let it start to brown for the extra flavor)
hit it with some butter and heavy cream ..stir and mix well then reduce
season to taste.. (meh..use white pepper if you actually care about the color of the sauce)
add cooked pasta and toss (maybe add a lil pasta water wth it)

if im up to it i might add mushrooms , shrimp or chicken.

heres another quick and easy dish dat dem eyetalians actually eat in eyetaly.
simple, yet takes a few trys to really master.. once ya do.. mmmmm.
medium-hot pan

add a good amount of olive oil
add a good amount of minced garlic and 1 or 2 dried red peppers (you can substitute with some red pepper flake instead)
saute garlic until lightly golden (dont burn the garlic)

add cooked pasta, season to taste and toss (a few drops of pasta water)
drisel more olive oil and serve

top wth parmigano-reggiano or some parmesan.. or whatever you like.
