Do you guys have those "fast fired" pizza joints like Blaze Pizza, 800 Degrees Pizza, and Project Pie? They're popping up all over the place here in California. It's a build your own pizza concept, and it's ready in like 5 minutes. Set up is like Chipotle where you walk down the aisle and pick your ingredients, then they put it in the pizza oven and it's done in 5 minutes. I wanted to invest in a new franchise when I first saw one of these places a few years ago, now they're everywhere.

There is a 200 calorie pizza place in Niles I think....I don't believe it is self serve, but it does tout like 6 mins for a pizza at lunch and crust options such as Quinoa and Buckwheat or whatever the latest health fad is.

But no, in the core northern suburbs I haven't seen a big explosion of self serve pizza places.

It's actually not self serve. Just picture Chipotle, except with pizza ingredients. You pick what ingredients you want, the employee puts them on the pizza dough, then it gets put in the oven.

On Monday I saw a new place pop up on GrubHub.... Parmesan's Station.... a 2nd location in the Tinley Park train station of a pizza place out in Frankfort.

I tried em.... was decent, will try again.

I saw someone eating this the other day at California Pizza Kitchen. It's literally a salad on top of pizza dough, and they call it a salad pizza. Was wondering, what do Chicagoans think of CPK? Last time I was in Chicago, the CPK restaurant in downtown was virtually deserted. I always thought CPK was some fruity California thing, but when I first tried some of their pizza, it was actually pretty decent.
