This is what I do. It works quite well. :)

I tried doing the two tortilla thing because that's what it seems like they do when you order it at restaurants. I could be mistaken though.
Nope they do half cheese

Thanks to everyone for the advice and ideas... I bought a different cheese mix today to try and I will try the half cheese and medium/low heat with no butter or oil and see how it comes out.

This goes for omelet's too. I'll do a mixture of chihuahua cheese and colby jack both grated fresh. Pile it pretty high and cover only one half of the omelet. Fold it over like a taco and the heat of the eggs makes this omelet like the cheesiest fluffiest omelet you can eat.

Hey brett, btw I did not find that chihuahua cheese in packages or in blocks at Jewel.... do I need to go over to the Deli area?

Won't find them at Jewel. Try Tony's, Caputo's, Cermak Fresh Produce
