thx..these were country ribs which are much. much thicker. I think that was part of the reason for the toughness. I probably should have wrapped them in foil after the three hours.

The whole time I have them in the oven they are wrapped in foil...should have mentioned that.

You can grill them for an hour then cut them. Put them in a pan of BBQ sauce and I use coca cola to help sweeten and break down the meat. Wrap it in foil. Let it go for as long as you can.
